Tasty Mexican Spices - Cumin, Chili, Coriander and More

Mexican spices are used in many dishes found in Mexico. Some are spices you can find anywhere, such as Garlic. Others give unique flavors. Epazote is a spice that is not as common. It is also known as “Mexican tea.” It is used to flavor beans and other foods, but should be used sparingly because it can be poisonous in large amounts. Even though it is strong, it is said to be good for intestinal discomfort.

Another Mexican spice frequently found in Mexican dishes is chili powder, sometimes spelt chile powder. This spice is actually a blend of various chilies and other spices. It is used to flavor vegetables, salsas, meats, poultry and pretty much anything else. Chile powder is also a key ingredient in many sweet Mexican dishes and treats. Chipotle chili powder is made from dried, smoked jalapeo peppers. It has a unique taste and suits plenty of recipes. Chipotle is also becoming increasingly popular outside of Mexico. Ancho is another type of chili, which tastes sweet and fruity. Depending on the chili powder recipe, you might want to use green chile powder or pasilla chile powder, since each will give a slightly different flavor to the recipe they are added to so experiment.

Common spices used in Mexico are Cumin, and Oregano. Mexican dishes that include tomatoes are perfect with oregano. It gives the dish an earthy flavor. Cumin gives Mexican dishes a taste that cannot be matched. Cumin takes three to four months of a long summer to grow. Cumin is a dry seed from the herb Cuminum Cyminum that is a member of the parsley family. This spice is the key component in curry powder and chili powder. Cumin can also be boiled and served as a tea, which is called “cumin cider.” Cumin is a spice that has been used for many centuries and is going to continue to be used by the people of Mexico for many more.

Some Mexican spices are used alone and others are made into blends. One popular blend is called recado rojo. It was used many years ago by the Mayans and is still extremely well liked. The annatto seeds it contains give it a red hue, which is transferred to the recipes you use it in your cooking. Cinnamon, cumin, garlic, clove, and oregano are some of the spices in recado rojo. Mexican foods from the Yucatan area are associated with this spice blend. It is also quite simple to make your own.

The shrub that annatto seeds come from is called achiote. Grown in Southeast Asia and introduced to the Spanish in the 1800s, the achiote fruit itself is not edible. The American Indians used annatto for body paint many years ago. Some parts of the achiote plant can be added to medical remedies to treat burns and headaches.

If you want to try these spices from your home, they are available at major grocery stores. You can even make your own blend of Mexican spices. Gather a few of the mentioned spices in this article, along with paprika and salt, and blend them together for a sensational burst of flavor. This is a great blend of chilies. It can be added to foods that are baked, broiled and barbequed. It is perfect on chicken and pork. It is an excellent addition for your next barbeque. Let the grilling begin!

Pharmaceuticals in water supply systems

Reports of pharmaceuticals products in water supply samples were carried by every major new organization earlier this year. Along with spin-offs of that covered how they got there and what the consequences might be to your health.

The one thing that none of the reports mentioned was what individuals could do to remove the threat. They talked about how sewage treatment facilities could take out nearly all of the traces by using reverse osmosis. They mentioned it was an expensive step that few plants choose to use.

They noted that improvements at drinking water treatment facilities could reduce the level of pharmaceuticals in the water supply. They even talked to many congressmen and the EPA about what should be done.

Everyone showed concern, except some callous representatives from major water providers. They simply said the public didn’t need to know, because they wouldn’t understand and might overreact.

Otherwise, everyone agreed that something should be done. The congressmen said they would hold a hearing concerning the threat. The EPA said they knew that it was a major concern.

But, no one bothered to explain that people could protect their families, if they chose, too. We have the technology and in the home, it is not that expensive to use. It simply requires a sub-micron particle filter, activated carbon and multi-media blocks.

Some of us have known about pharmaceuticals in water supply systems for years. One of the most common is the hormone estradiol, used in birth control pills. Only some of the hormone is absorbed by the body. The rest is excreted along with other waste products and flushed down the drain.

From there, it goes to a waste treatment facility. They do the minimum regulation required by law and then dump the waters into a river. Researchers have found numerous fish downstream from these facilities with many strange mutations.

Some had both male and female sex organs. Some had smaller than normal heads. Others were sterile. It was learned that all of these mutations were caused by exposure to estradiol. So, what can the hormones and other pharmaceuticals found in water supply samples do to human beings?

As usual, the greatest risk is to young children that are still developing. Scientists have shown that some combinations slow down the growth of human cells. Other combinations increase the growth of cancerous cells.

It is interesting to note that some of the common contaminants present in tap water cause and accelerate cancer growth. If a person doesn’t have a home water filtration device, not only does he have an increased risk of cancer, but if he has a tumor, it will grow faster.

None of this is necessary. We can remove the chemicals that cause cancer, the chlorine that tastes bad, drugs that threaten our health, the toxic metal lead and all of the other contaminants commonly found in tap-water. We just need to buy an inexpensive device and install on the faucets of our home.

That’s what I’m trying to let people know the truth. It’s something that reporters never seem to say. They attract you with frightening headlines about pharmaceuticals in the water supply, then tell you there’s not much of a “threat” and then leave you with no solution. Now, you know what to do to be safe.

Mexican Frozen Treats - The Frozen Side of Mexican Desserts

It can get very hot in Mexico. Mexicans have a variety of cool treats to enjoy. From ice cream sandwiches to popsicles, they have many to choose from that you will love. The treats consist of chocolate, cinnamon, and different fruits. Some men even sell the treats up and down the streets similar to in America where you will see ice cream trucks in the summer selling cold snacks.

Paletas - Popsicles with a Mexican Flare

Popsicles are popular in Mexico. Paletas, which mean “little shovels” in Spanish, can be found in Mexican grocery stores. They come in regular shapes, but their flavors are what differs them from American popsicles. Some paletas include milk and tropical fruits, while others are full of more ice and more flavors that are tart. Some flavors that are not very common in America are chili, and cucumber.

If you like spicy food, you would probably love the chili one. You can make paletas yourself. They are healthy and low in fat. If you prefer to buy them, you can get them from street vendors in Hispanic neighborhoods. There is a California based company called Palapa Azul, which makes paletas for everyone to enjoy. You might even come across them at Wal-Mart!

Mexican Fried Ice Cream More Solid than Most Ice Creams

This is another delicious Mexican sweet treat but is rather Americanized. Mexican restaurants across the United States sell Mexican ice cream and Mexican fried ice cream and you can also get it at festivals. The ice cream used in the Mexican fried ice cream recipe is frozen harder than most ice creams. The ball of ice cream is rolled in Corn Flakes or cookie crumbs and then deep-fried at a low temperature so that the ice cream does not melt. When it is cooked, toppings such as cinnamon can be added. Fried ice cream is very popular and can be found in Japanese and Chinese restaurants too. You might find different flavors, such as green tea ice cream.

Mexican Ice Cream with Cajeta Sweetened Caramelized Milk

If in the mood for just regular vanilla ice cream, cajeta would be a great topping. Cajeta is a Mexican confection of syrup most commonly made from caramelized milk that is sweetened. The syrup is made by the sweetened liquid being cooked slowly and breaking down until it is very thick. Some people use different liquids instead of sweetened milk.

Cajeta can be made with goat’s milk, cow’s milk, or juice. It has different names in different Mexican neighborhoods, including crema de cajeta, dulce de leche, and leche quemada. Cajeta is great served on ice cream. The Hershey Company makes its own cajeta to please the Mexican population and Mexican food aficionados. If the day is warm and you want to cool off, cajeta on vanilla ice cream is sure to do the job.

These cold treats are quite straightforward to make yourself, if you want to have a go. You could research some different techniques and flavors and see what the results are like. If you have kids, it is a lot of fun for them to help you in the kitchen with your Mexican fried ice cream, paletas, or cajeta recipe and, of course, they will love the finished products. Cool Mexican sweet snacks are perfect on a hot day or on any other day of the year.
